
Meet Dr. Rachel Knowles

Rachel Knowles is a Doctor of Clinical Nutrition, professor, writer, and founder of Herbal Wellness Collective™. Her work sits at the intersection of clinical science, herbal tradition, and lived experience, with a singular focus: making health knowledge trustworthy, practical, and human.
Rachel’s professional journey began in clinical nutrition practice and academia, where she worked closely with children and families navigating complex health concerns—digestive issues, neurodivergence, food sensitivities, and the daily realities of feeding real humans in real life. Over time, she recognized a pattern: families weren’t failing at wellness, they were drowning in fragmented information. What they needed wasn’t more noise, but clarity.
As a professor, mentor, and CNS supervisor in graduate and undergraduate nutrition programs, Rachel became known for translating dense science into language that actually helped people act. That same skill drew her increasingly toward writing—books, guides, and educational resources that could reach beyond the limits of appointments or semesters.
That vision became Herbal Wellness Collective™, an independent publishing and education house devoted to everyday herbal living, integrative wellness, and enduring knowledge. Through HWC, Rachel publishes her own works alongside resources designed to help both professionals and families reconnect with food, plants, ritual, and seasonal care in grounded, accessible ways.
Rachel’s work has appeared in peer-reviewed journals, national nutrition and integrative health conferences, and classrooms across the country. As a mother, teacher, and neurodivergent clinician, she brings honesty and lived understanding to everything she creates. She believes wellness should feel empowering rather than overwhelming—and that the most meaningful education is the kind that lasts.
Through Herbal Wellness Collective™, Rachel now focuses on publishing, teaching through writing, and amplifying thoughtful voices in the wellness space—helping knowledge live on shelves, in kitchens, and in everyday life.
